My Simple Banana Muffins Recipe

Ingredients

  • 3 eggs
  • 150g self-raising
  • 150g butter
  • 150g soft brown sugar
  • 2 bananas (ripe)

Method

  1. Preheat oven 200’C/ 18C and line a muffin tin with muffin cases
  2. Start with butter and sugar first, whisk until pale and fluffy and then add the rest gradually until all the ingredients are in and smooth and feel light and airy
  3. Put a generous portion of mixture into each muffin case
  4. Pop into oven for between 15-20 mins depending on your oven
