Ingredients
- 3 eggs
- 150g self-raising
- 150g butter
- 150g soft brown sugar
- 2 bananas (ripe)
Method
- Preheat oven 200’C/ 18C and line a muffin tin with muffin cases
- Start with butter and sugar first, whisk until pale and fluffy and then add the rest gradually until all the ingredients are in and smooth and feel light and airy
- Put a generous portion of mixture into each muffin case
- Pop into oven for between 15-20 mins depending on your oven
