Stir Fried Okra with Onions

  • Serves 3 people
  • INGREDIENTS
  • 1 tbsp. sunflower oil
  • 1 tsp cumin seeds
  • ¼ tsp asafoetida
  • 400g okra, cut into angles of 1cm
  • 2 medium onions, cut into small pieces
  • 1 tsp garlic, minced
  • 1 tsp ginger, minced
  • ½ tsp green chilli, minced
  • 1 tsp salt
  • ¼ tsp Turmeric powder
  • 2 tsp ground coriander
  • 1 tsp ground cumin
  • ¼ tsp red chilli powder
  • 1tbsp fresh lemon juice
  • Method
  • Heat the oil in a large wok over a medium heat for 30 seconds. Add the cumin.
  • When the seeds splutters, and start turning dark brown, this will happen after seconds.
  • Add the asafoetida, salt and turmeric followed by the chopped onions
  • Cook until onions are they are dark brown about 5 mins.
  • Now add garlic, ginger, chilli paste, cook for 2 minutes
  • Add all the other dry ingredients only. Stirring for 1 min.
  • Now add cut okra and tossing in with all the spices.
  • Add lemon juice and stir.
  • Reduce the heat to low and do not stir for 5 min, after this stir every 2 mins until okra don’t have any more slime on the spoon.
  • Cook for about 15mins in total.
